Raw Caramel Apple Dessert

It's about 85 degrees in Seattle right now which means it's like 100 degrees in our apartment. Cooking has become unbearable!

My husband is a genius and came up with a delish dessert and a fun way to cool down while we are in the house in these dog days of summer. The first is very simple: a dollar store spray bottle. We're having fun in here spraying each other and feeling more refreshed. The other thing my handsome hubby came up with: the BEST dessert ever! There isn't much of a recipe but here is the general idea:

Chop up 1 apple, add 1/2 cup chopped walnuts and sprinkle with a dash each of cinnamon (maybe 1 tsp), salt, and stevia. Now here's the part where we kick it up a notch. Add a very small amount of oil and caramel extract. Mix it all up and enjoy. It is seriously like a raw caramel apple pie without all the guilt and no baking in this hot heat!!

Hosanna, Hosanna {Palm Sunday Craft and Treat}

"A very large crowd spread their cloaks on the road, while others cut branches from the trees and spread them on the road. The crowds that went ahead of him and those that followed shouted,

“Hosanna to the Son of David!”
“Blessed is He who comes in the name of the Lord!”
“Hosanna in the highest heaven!”

When Jesus entered Jerusalem, the whole city was stirred and asked, “Who is this?” The crowds answered, “This is Jesus, the prophet from Nazareth in Galilee.” - Matthew 21:8-11

Hannah may be young but she is soaking up so much information at this age. I can see her learning and growing on a daily basis and I am just amazed. That is why we are starting young teaching our little lady about Jesus and the things of God.

Yesterday we taught her about Palm Sunday and Jesus' triumphant entry into Jerusalem. She loved when I traced around her little hands to make the "palm branches" and then waving it around in the air while I sang a kid song about Palm Sunday. She especially loved when I made treats for my AWANA girls. I think she thought they were for her! I did let her lick the frosting off the whisk. ;)

One of the verses that drives me as a parent is the one from Deuteronomy 6:7 that says, "You shall teach them [God's Words] diligently to your children, and shall talk of them when you sit in your house, when you walk by the way, when you lie down, and when you rise up." It is our duty, no matter how young (or old for that matter), to teach our children God's truth. I hope and pray that she will someday come to know and love the Lord but until then I will continue to share and impress upon her how good He is to me and been in my life!

Quick and Easy Palm Sunday Cupcakes {No Recipe Required}

I wanted to make a treat for my AWANA girls but I didn't have much time to do any serious baking. I bought some pre-made muffins/cupcakes at the supermarket and then whipped up a quick frosting to top them with. For the toppers I used the sugared "fruit" candy. Cut the green candies  length-wise and stick a toothpick in them. The cut sides are super sticky so they stick together well. Stick them together to resemble a palm branch. My toothpicks were really long for some reason so I made some little banners that said hosanna on them. They turned out pretty cute. I even gave the girls some chocolate gold coins to represent Jesus throwing out the money changers at the temple. :P Enjoy the rest of Passion Week and remembering our Savior and His great love for us!

My {After Baby} Transformation

During my pregnancy with Hannah, we went to the ultrasound appointment expecting to hear that she was growing healthy and everything was going according to plan. It wasn't. My doctor said that our little bean was growing but she was measuring small for her gestational age. She advised me to stop working out and to eat as many calories as possible to get her big and healthy - and that is just what I did. Now I know that you gain weight while having a baby, to ensure a healthy living space for those 9 months in the womb and also to make her healthy as she grows, but I gained upwards of 60 to 65 lbs!

After having my bundle of joy, although I was happy to finally have her in my arms, I was suffering from postpartum depression. Add being overweight to the mix and I was not a happy camper. I saw a former co-worker post on her facebook page about an exercise program she was doing that was specifically geared towards moms. I checked it out and fell in love. I contacted the coach immediately and started a few weeks later in her next session. I completed two rounds, took several months off and now I'm back to complete two more sessions. I am down to the weight I was when I was the most fit I've ever been. But honestly, it's about more than the weight.

Neubody, showed me that I am capable and strong. I can achieve anything I put my mind to. I feel great! I love working out and taking care of myself. I love the positive impact it's had on my family. Hannah copies the workout moves that her Daddy and I do. It's so darn cute and it's wonderful to think that we are instilling in her good habits about taking care of the bodies God gave us so we can care for and serve others.

Along with the workouts in the program, I learned about how much nutrition plays into your overall health and weight lose. Our household already ate pretty clean because of Jeremy's food sensitivities but it has been revamped and is 99% clean of processed foods, except for the occasional items like packaged dijon mustard, although I did just find a homemade dijon recipe that I will be trying so we can get to 100% clean.

On our 4th wedding anniversary last summer, Jeremy and I got dressed up and went out to one of our favorite restaurants in the area. Afterwards we came home and had some amazing homemade raw key lime pie. You'll never guess what secret ingredient is in it that gives it it's creamy texture. Ready, it's - avocados! Go and try the recipe, pronto! It's so simple and oh so delicious. Who needs processed and sugar saturated desserts when God made natural sugars and treats that are WAY better, in my humble opinion! :)

*Chef's Note: We omitted the tapioca flour and substituted figs for the dates since Jeremy can't have them. It turned out amazing. Seriously, go try this now!*

Fall is Delightful {and Easy Pumpkin Spice Muffins}

Can I just say that I am thoroughly enjoying the sights, sounds and tastes of fall. It really is in the small things that make all the difference. So on either a hard day after work or a during a busy weekend I can take a moment and just enjoy. The sound on the rain pouring outside my window soothes my soul. The leaves falling off the trees and dancing in the streets puts a smile on my face. And anything pumpkin makes my tummy oh so happy (try pumpkin seeds, TJ's Pumpkin Spice Coffee, and these EASY pumpkin spice muffins.)

Pumpkin Spice Muffins (Adapted from Hungry Girl Yum Yum Brownie Muffins)

1 box spice cake mix
1 15 oz can pumpkin

Mix the two ingredients together. Don't add anything else that may be mentioned on the box, such as eggs, oil or water. The mixture will be very thick and you will be tempted to add in other things to make the batter smoother. DO NOT DO THIS! Place batter into muffin tins (or mini muffin tins) lined with paper, or sprayed with non-stick spray. Bake at 400 degrees for 18 minutes for regular muffins or 15 for mini muffins.

Makes 12 regular or 36 mini muffins.

Summer Delights

Summer has finally arrived in Seattle and this weekend was filled with the many of joys of this time of year.

Jeremy got home from work early on Saturday so he came over to my Mom's house and we each got to work making dinner. Jeremy worked on the drink, I worked on the fruit salad and Mom made the main course.

I love using fresh fruits and veggies to make super easy and super yummy meals. Take these for instance: For a cool mocktail to help beat the heat, add 1 can of coconut milk into your blender. Use the option on your blender to get the mixture good and frothy. Next add 1/2 pineapple that has been sliced into the blender. Add a little agave to taste and your ice and blend it all together. And for a refreshing fruit salad take 1 watermelon and a bunch of mint. Mince the mint and add to the cubed watermelon. Toss and enjoy. See, so easy but the results are DELICIOUS!!

My Mom also made my new favorite salad: a BLT salad. How smart is that!? They are good on bread but even better as a salad!

8 slices chopped and cooked bacon
4 cups sliced green-leaf lettuce
1 cup halved grape tomatoes
1 cup low-fat croutons

Dressing
1/4 cup light mayo
1 Tbs. water
1 Tbs. cider vinegar
1/2 tsp. agave
pinch of black pepper

Combine all the ingredients for the salad in a large bowl. Then, in small bowl, whisk together the dressing ingredients: toss salad with dressing. Makes 4 servings.

And after church today it was too nice out to just go home, so we made a trip to the local zoo and enjoyed looking at God's varied and sometimes goofy creation.

Loving our summer so far and looking forward to enjoying more of it. I hope you also had a joyous weekend!

Grill Master

My husband is known around our house as 'king of the grill'. Before we were married he had a whole slew of different roommates, one of them was from Shreveport, Louisiana. It was that roommate, who taught him how to spice and cook lip smacking steak, pork, chicken, you name it!

The key to really good BBQ food is the seasoning. Jeremy likes to spice the heck out of the meat, but trust me, you will love it! We made some of the seasoning for my Father-in-Law for Father's day.

Jeremy's Amazing BBQ Seasoning - goes well on chicken, beef, pork, and burgers

Dry Ingredients:
*Tony Chachere's creole seasoning
*Onion flakes
*Garlic powder
*Crushed red pepper
*Coarse black pepper
*Dried basil
*Dried parsley

Wet ingredients:
*Hot sauce
*Olive Oil
*Avage Nectar or honey

*Minced fresh garlic

Combine the dry ingredients. You can eyeball the amount depending on the amount of meat you are cooking and to your particular taste. We LOVE garlic so we add more of the garlic powder than others might use. Rub the dry seasonings on the meat. Then add your hot sauce, olive oil, avage nectar and fresh minced garlic to coat. Next, fire up the grill and start bbqing. The result is amazingly spicy and sweet BBQ goodness. My mouth is watering just thinking about it. YUM!

Test Kitchen

A baby shower is in the works for my sister-in-law who is expecting her first child this fall. The detail I am working on now is the menu. What would be delish to serve to a large group of people, including men, who I happen to know eat a LOT!? I did some searching on the web and found some great looking dishes. So I went to work to make sure these were every bit as yummy as they looked online.

My test subjects were my in-laws who visited last weekend. I told them to be completely impartial and let me know what they thought of the recipes. This salad was yummy AND beautiful. The strawberry vinaigrette was tasty but one of my 'guinea pigs' said that maybe adding a bit of honey or agave nectar would make it even better. I have a mean sweet tooth so how could I say no to that?

I also made a dessert that I think would be so adorable on a pretty little table at the shower. Totally cute and boy are they a cinch to make. Combine strawberry yogurt with whipped cream and fresh cut strawberries. Fill mini graham cracker pie crusts and chill in the fridge or freezer. Top with strawberry garnish and enjoy. SO yummy!

The work was hard and the testing was quite a challenge :) but the results are in and the food was fabulous. Looking forward to my next round of testing and trying out this recipe!

The Great Indoors

The sun has not been making very many appearances in the Pacific Northwest this 'spring'. So instead of sulking around inside about how we can't do that many outdoorsy things, I decided to bring the outdoors indoors.

We laid down a picnic blanket in the office and had some good ol' camp food including brats, potato salad and every one's favorite; bug juice! Very yummy food if I do say so myself.

After dinner we put a sheet over the window to block out the daylight and make the room dark in order to see the celestial beauties I stuck to our ceiling. We counted the stars and moons and looked for the big dipper. And following our 'star gazing' we played some cards. What screams camping more than card games? Maybe it is just me that is what we always did when I go camping. :)

All in all, it was a wonderful evening spent in the great outdoors, indoors. And this morning the weather man forecasted some actual nice weather coming. Maybe we can do this for real next weekend!

{Empty Tomb Easter Treat}

It is the day before Resurrection Sunday and I have an awesome little treat to share with you. I thought these were a neat way to share the story of Jesus' death, burial and resurrection, however, I have a new idea that I knew I had to share with you!

This is super easy and cute, not to mention tasty! You will need:

* graham crackers
* chocolate donettes
* mini oreos
* peanut butter (or frosting if food allergy)
* shredded coconut and green food coloring

The first step is to put some of the coconut in a ziplock bag with a few drops of green food dye. Mix the coconut around until it is evenly coated to look like grass.

Next, spread a thin layer of peanut butter or frosting on the graham cracker.

Cut a small part of the donut off on one side so it will sit flat on the graham cracker.

Now it is time to assemble the treat! With the graham covered in PB, place the donut cut side down on one side of the graham. Place your 'grass' in front of the donut tomb and pat it down. Take one side of a mini oreo cookie off and place the cookie slightly to the side of the donut, resembling the stone that had been rolled away.

And the final step is to add a sign which exclaims, 'He is risen, because He did indeed rise!

No Hurry Veggie Curry

The slow cooker is an invaluable item in our house. It helps so much with our busy schedules, because it virtually does all the work for us, we just come home to a delicious meal ready to go!

On any week day when I would prepare this recipe it would be no problem to wait because I am busy at work and come home to the curry deliciousness. However, when I prepared it this past Saturday, I was home and it was so hard not to keep checking it so see if it was done. I got a craving for curry and just had to get my fill. When the time passed and the food was finally ready, this stuff sure hit the spot! I guess the saying is true, 'good things come to those who wait'!!

Good Eats

When Jeremy and I first started dating, I was attending a cooking class at a local grocery store with my Mom each week. Because of this I was able to impress him with my fancy shmancy cooking skills. That store has since stopped offering the class and my work and other responsibilities have made it hard to plan the same meals that I used to. My sweet and oh so caring husband has been making most of the food in our household as of late. In this period of our lives this set up just works for us. I do enjoy cooking, don't get me wrong, but after a long day of work AND the long commute home, a hot meal sitting on the table already prepared is such a blessing!

So when I do cook, I like a recipe that is fast and/or something I can prepare ahead of time and just pop in the oven when I get home. I'd have to say that most of the recipes I make these days have been found online, and more specifically from other bloggers. I have accumulated some favorites from these amazing gals and they are husband approved. :)

Baked Egg Casserole

Make Ahead Brunch Bake

Santa Fe Soup

Grilled Avocado with Tomato & Corn Salsa

And a new recipes for my bible study next week. YUM!

Life Update and Random Babble

HAPPY GROUNDHOGS DAY!
I have not been posting as frequently because things they are a changin' in my world so I have been busy attending to those matters. I have a new job, new boss and new beginnings for the future. Monday was my official first day of work and it's been great! A little hectic getting used to new systems and bus routes but all in all it's been a very good move. God has blessed me so with this new opportunity!

One of my sweet new co-workers baked these adorable Groundhogs day cupcakes for everyone in the office. Definitely an idea I'll be using next year!

And on a final note, I stumbled upon this book that has some amazing ideas for weddings and all the parties associated with them. These ladies make party planning look way, WAY too easy. I wish it was this way when I did it :)

My Snow Day

Here in the Pacific Northwest, we were just hit with a blast of winter snow this last week. It never ceases to amaze me that although we know it's coming, it seems we are always caught off guard by the weather. I know for myself, I was grumbling away on Monday as the snow continued to fall. I think it's the part where you have to venture to work or go to the store that it makes the snow not so fun. But thank goodness my office was closed yesterday so I had an official "snow day". I haven't had one since I was in high school so it was a treat. Let me take you back on my snow day adventure.

6:30AM- Receive a call from my best friend and co-worker who informs me that the office is closed. WOOHOOO

6:45AM- Cook some eggs and have breakfast. Not rushed at all; Boy did I love it!

7:00AM- Help Jeremy do some cleaning around the house. So fun to pal around the house together :)

8:30AM- Take a walk in our neighborhood to check the road conditions. It was a beautiful walk and I got to take my snow shoe traction thingys for s spin. They worked; I did not slip once!

9:30AM- Do some remote office work on the computer. It was a slow work day to say the least.

11:00AM- Send Jeremy off to work and prepare lunch. Now it's time for me to get some work done!

12:00PM- Patch up some of Jeremy's jeans and work on some crafts. LOVE this extra time to work on these little projects that just seem to pile up during the week.

2:30PM- Do some more office work and got things cleaned up and ready for work back at the office tomorrow.

4:00PM- Start baking come cookies and homemade herb butter for Thanksgiving rolls.

5:00PM- Call my Mom and in-laws. I love my family; Fun times talking about the days events and the upcoming holidays!

7:00PM- Get the dishes cleaned and house straightened. Listening to my favorite hymns makes it so much more enjoyable.

8:20PM- Jeremy arrives home, we have a quicky dinner and jump in bed to start it all over again tomorrow!

Back at work today but boy am I thankful for my busy snow day!

It's all in the details

What a whirlwind of a weekend! 2 showers: one bridal and one baby. Thank goodness for the baby shower because I just had to show up and enjoy, after working hard at my BFF's shower the day before.

Everything turned out beautiful and the ladies enjoyed themselves. One important thing to remember when planning a shower or party are the details. It's all in the details. Focus on the theme or a certain element or style to bring it all together.

For Devon's kitchen & recipe shower we had a cookie decorating contest (judged by the bride-to-be of course), cooking themed quiz & all the guests offered their words of wisdom on the 'recipe for a happy marriage'. All the games/activities were a load of fun, but the real fun was when Devon opened up her gifts with this special moment when her Mom held one of her 'gifts' and made the bride blush!

The food was also a very important element of the shower because it was after all, a kitchen & recipe shower. The menu included delicious Krispie Kreme donuts, fresh fruit, greek yogurt, muffin tin egg bakes, mimosa's and coffee. A very good spread if I do say so myself. The egg bakes were a big hit and the best part is that they were SO simple to make.

All in all, it was a very happy and beautiful affair. I am happy for this girl! Now she is ready to cook for her future husband with tried and true recipes from each party guest and lots of neat kitchen gadgets and equipment.

Taste of Summer

Our summer here in the Seattle area is slow in coming, so to help jump start things, I decided to make some delicious summertime recipe favorites.

Each season has it's distinct flavors and foods that go with it and with summer comes BBQ'ed chicken burgers fresh off the grill with some fresh sauces and produce. This week we tried the chicken burger with pesto mayonnaise. And it is just as easy as it sounds to make. Grill your chicken however you like it and then spread over your sandwich buns the pesto mayo which is 1 part basil pesto to 3 parts mayo. It is so yummy and it's full of flavor!

With Independence day fast approaching, I am trying to figure out which dessert to bring to our church service in the park/fellowship picnic. Martha's Everyday Food sent me an e-mail this week with what looks like an amazing recipe: 'Smore cookies! Who can pass that up? But what could be more American than an apple pie cookie ice cream sandwich? Am I making you hungry yet? If I can't decide on one I might just have to make both, which wouldn't be so bad I guess ;)

Real Simple: Entertaining & Cooking

Party planning is fun, but it can also be very daunting. Trying to stick within a budget, plan the perfect menu and then to actually make it all, can almost drive a girl crazy (and believe me, my husband has seen it happen.) I have discovered some easy entertaining tips and quick easy recipes that are a cinch to make and will impress your guests too!

My husband and I organize small get-togethers with the youth of our church as well as a christian apologetics meetings. Any excuse to try out some new recipes and make a pretty table-scape, I am down. But first...

Organization is key to make hosting a breeze. There are six questions to answer to get started: What is the date? How many guests will be there? What is the location? What type of party will it be? What is your budget? Is there going to be music or entertainment?

For our particular parties, we don't have too much involved but it still requires some delish food to share. This last weekend we had a game night on Saturday and then a belated Mother's Day celebration with the family on Sunday. Both days I tried out these simple yet tasty recipes.

Inspired by Ina Garten's recipe, these beauties took only have the work but sure tasted like the real deal. The secret is in the frosting. Homemade is always the way to go- none of this store bought stuff!

And the cupcakes themselves were equally as easy to make. All I had in the house was a box of Betty Crocker yellow cake mix but to turn my yellow cake into chocolate cake, I added 1/4 cup cocoa powder to the dry mix before adding the rest of the ingredients. You never would have known it was yellow cake. Put a nice dollop of the frosting on the cupcakes and voila, dessert perfection!

For our Mother's day dinner, I made spanish rice to go on the side. In the latest issue of "Everyday Food", Martha offers a simple recipe that is sure to please. I substituted the white rice for long grain rice and cooked it a little bit longer but it was oh so good. Jeremy asked me to make it again for his lunch this week. It must have been good for him to ask for it twice in one week! I was faced with a dilemma, however. I usually buy the tiny 6 oz. cans of tomato paste, but my husband bought the ingredients this time and he opted for the larger, 15 oz. can. What to do with all the leftovers? I certainly won't be using all the rest within the next week.

I looked around my kitchen and found these foil cupcakes trays. After using them to bake my dessert in, I cleaned them out and filled them with remaining tomato paste and stuck it in the freezer. After they have frozen, you can remove the pieces individually and put them in a bag. The next time you need one tablespoon of tomato paste, you don't even need to measure it. Just take one of your tomato paste balls from the freezer and drop it into the saute pan!

Party planning shouldn't be so involved that you can't even enjoy the celebration. Take some time to plan ahead and prepare for the big day, pick out some simple recipes and enjoy the party!

5-Star Chili

Do you want to make a delicious dinner that your family will LOVE? It's nothing fancy but it is oh so good. I served this at the game night we had a few weeks back with our friends from church and it was a hit.

The jalapeño peppers give it a kick so if you like spicy then this will make you a happy camper. If you don't like spicy then you can omit the peppers. My philosophy is: throw in or leave out whatever you want. Cooking is flexible that way and when you get back to the basics not only does it make it a heck of a lot easier, but it tastes fabulous!

What You Need!
1-1/2 lb. lean ground beef
1 large onion, finely chopped
2 jalapeño peppers, cut into 1/8-inch-thick slices
3 Tbsp. chili powder
1 can (14.5 oz.) fat-free reduced-sodium beef broth
2 cans (15 oz. each) kidney beans, drained, rinsed
2 cans (15 oz. each) stewed tomatoes
1 can (8 oz.) tomato sauce
2 Tbsp. Worcestershire sauce
2 Tbsp. soy sauce
1/2 tsp. ground black pepper

Make It!
BROWN meat in Dutch oven or large deep skillet on medium heat; drain, if necessary. Add onions and jalapeno peppers; cook 5 to 7 min. or until tender, stirring frequently.

ADD all remaining ingredients except cilantro and cheese; stir. Reduce heat to low; cover. Simmer 1 hour, stirring occasionally.

TOP with whatever you like: sliced avocado, sour cream, shredded cheddar cheese, sliced scallions, red onion, etc..

If you aren't in the traditional chili mood, you can try this delicious gem of a recipe. After you get past the fact that you are using Velveeta, you will enjoy a yummy dinner!

a promise and a dessert

Don't you get happy when you see a rainbow?! I know I sure do. Not only because it usually means the rain is subsiding, but because it is a beautiful reminder of God's covenant, His promise to us. What a blessing to not only know in your heart that God loves you but to actually see right in front of you that He is keeping His promise to His people. We have an awesome God and every time I see a rainbow I get happy.

"Praise be to the LORD, who has given rest to his people Israel just as he promised. Not one word has failed of all the good promises he gave through his servant Moses. May the LORD our God be with us as he was with our fathers; may he never leave us nor forsake us. May he turn our hearts to him, to walk in all his ways and to keep the commands, decrees and regulations he gave our fathers." -1 Kings 8:56-58

Want to know another rainbow that makes me happy? My new favorite (bake-free) rice krispie/fruity pebbles rainbow dessert. Mmmm.. don't they look good? I made these for my AWANA girls last week and they LOVED them. Who am I kidding, I loved them! I had extras that were easily devoured by yours truly. Beware with this recipe as it is one of the easiest things you can make AND it is delish!

Rice Krispie & Fruity Pebble Cupcake Treats
1/4 cup butter (1/2 stick)
6 cups marshmallows
4 cups rice krispie cereal
4 cups fruity pebbles cereal

Melt butter in microwave. Add the marshmallows and microwave for 1 1/2 minutes and stir after 45 seconds. Add the 8 cups of cereal and blend together. Push into greased muffin tins or large baking dish. Let cool and add frosting if you want to make them extra tasty. Enjoy!

Simple Things

There are many simple joys that I just can't get enough of.. waking up to my husband's kisses in the morning, reading God's word before my busy day, and of course my morning coffee.

Today I was able to enjoy some other simple pleasures like picking out some gorgeous spring tulips for our kitchen table and making some delicious AND insanely easy cookies with my Mom.

Crispy Lemon Drop Cookies

Ingredients:
1 pkg. lemon cake mix
1 cup rice krispies
1 cube butter
1 egg

Mix all ingredients together and form into small balls. Place on cookie sheet and bake in 350 degree oven for 9 minutes. Enjoy!
